Tasting Notes
In the glass, this wine shows a deep yet luminous ruby-red hue, with the intensity and clarity you expect from a great Côte de Nuits Grand Cru. The nose opens with layered aromas of ripe red and black fruits—morello cherry, wild strawberry, blackberry and blackcurrant—interwoven with subtle notes of forest floor, dried herbs, wet earth and a delicate floral lift of violets. Hints of spice and refined oak add further nuance without overwhelming the fruit.
On the palate, the 2016 Griotte-Chambertin Grand Cru is silky and precise, with a finely woven texture supported by firm, ripe tannins. Generous layers of red cherry and dark berry fruit are framed by subtle sweet spice, a refined mineral streak and well-integrated toasted oak. The finish is long, complex and beautifully balanced, combining freshness with concentration and a lingering, mouthwatering salinity. Still youthful, this wine has outstanding aging potential: while already approachable with some air, it will gain in complexity, harmony and tertiary character between 2024 and 2040, and potentially beyond under ideal cellaring conditions.
Production
The fruit for this wine comes from the revered Griotte-Chambertin Grand Cru, a tiny vineyard nestled alongside Burgundy icons such as Chambertin and Clos de Bèze. Here, rich clay-limestone soils and a well-exposed slope provide optimal drainage and slow, even ripening, yielding Pinot Noir of remarkable finesse, aromatic purity and depth. Grapes are typically harvested by hand at optimal maturity to ensure meticulous selection in the vineyard, followed by careful sorting in the cellar. Vinification focuses on gentle extraction to preserve the delicacy of the terroir: a cold maceration may precede fermentation, with a combination of punch-downs and pump-overs tailored to the vintage. The wine is then aged in French oak barrels—often with a proportion of new oak—allowing the integration of fine tannins, subtle spice and structure without overshadowing the vineyard’s signature elegance and minerality.
Food & Serving
This Griotte-Chambertin Grand Cru is an outstanding partner for refined, flavourful dishes such as roast duck with cherries, slow-cooked lamb shoulder, venison or other game birds, as well as veal in truffle jus. It also shines alongside mushroom-based dishes, roasted root vegetables, and aged hard cheeses like Comté or Gruyère. Serve at 15–17°C to highlight its aromatic complexity and textural finesse. Decanting for 1–2 hours in its youth will help the wine open up and soften its structure; older bottles should be handled gently and, if decanted, done so just before serving to preserve their delicate, mature nuances.
