Tasting Notes
In the glass, the 2016 Bâtard-Montrachet shows a luminous, pale gold color with green reflections that hint at both youth and intensity. The nose is layered and complex, opening with notes of ripe citrus, white peach, and Williams pear, then evolving toward acacia blossom, toasted hazelnut, fresh butter, and a fine vein of chalky minerality. Subtle hints of brioche, honeycomb, and spice from top-quality oak appear with air, adding further depth.
On the palate, this is a powerful yet superbly balanced Grand Cru. The texture is broad, silken, and mouth-filling, with rich stone-fruit and citrus flavors framed by vibrant acidity and a pronounced mineral backbone. Flavors of lemon curd, crème pâtissière, almond, and wet stone unfold in precise, persistent layers, leading to a long, saline, and slightly smoky finish. Production
Sourced from the famed Grand Cru vineyard of Bâtard-Montrachet on the border of Chassagne- and Puligny-Montrachet, this wine reflects a terroir of limestone-rich soils over marl that naturally yields depth, structure, and complexity. The vines are farmed with great precision, with careful green harvesting and strict selection ensuring only perfectly ripe, healthy Chardonnay grapes are picked, typically by hand to preserve integrity. In the winery, Henri Boillot follows a Burgundian approach focused on clarity of fruit and terroir expression: gentle pressing, fermentation in French oak barrels (with a judicious use of new oak), and extended lees aging with minimal bâtonnage to build texture without heaviness. The result is a wine that marries density with tension and signature Bâtard-Montrachet gravitas.
Food & Serving
This Grand Cru deserves equally refined cuisine. It pairs beautifully with rich seafood dishes such as lobster with butter or cream sauces, seared scallops, turbot, or sole; it is also superb with roasted poultry, veal in cream, morel mushrooms, and luxurious dishes featuring truffle. Well-aged hard cheeses or creamy cow’s milk cheeses also make an excellent match. Serve at 10–12°C (50–54°F) to allow the aromatics to unfold gradually. For current drinking, decanting for 30–60 minutes is recommended to let the wine open up, especially in its youth; older bottles should be handled gently and decanted briefly, mainly to separate sediment if present.
