Tasting Notes
In the glass, the 2016 Eisele Vineyard Estate Cabernet Sauvignon shows a deep, saturated ruby-purple hue that hints at both concentration and youth. The nose opens with pure cassis and blackcurrant, followed by layers of cedar wood, graphite, tobacco leaf and subtle baking spice from fine French oak, all wrapped in a cool, mineral undercurrent from the vineyard’s gravelly soils.
On the palate, it is full-bodied and powerful yet impeccably balanced, with compact, silky tannins and a precise, linear structure. Flavors of ripe blackcurrant, blackberry and plum are interwoven with notes of cigar box, pencil shavings, dark chocolate and a touch of dried herbs. The finish is long, lifted and very persistent, with a sense of weightless intensity that is a hallmark of Eisele. While already impressive and enjoyable now with proper aeration, this 2016 has significant aging potential and will continue to gain complexity over 15–25 years or more in a proper cellar.
Production
The Eisele Vineyard sits in the northeastern corner of Napa Valley, just east of Calistoga at the foot of the Palisades mountains, on well-drained alluvial and gravelly soils that have nurtured vines since the 1880s. Farmed organically since 1998 and biodynamically since 2000, the estate is managed with meticulous attention to soil health and vine balance, ensuring low yields and exceptional fruit purity. The Cabernet Sauvignon grapes are harvested entirely by hand, with rigorous selection in the vineyard and again at the winery. After a careful, temperature-controlled fermentation designed to preserve aromatics and fine tannin structure, the wine is aged for around 18 months in French oak barrels, a significant portion of which are new, allowing the oak to integrate seamlessly without overshadowing the character of the site.
Food & Serving
This is a natural match for rich, savory dishes that can stand up to its depth and structure: think grilled ribeye, lamb chops with rosemary, braised short ribs, venison or other game, and slow-cooked stews. Aged, firm cheeses such as Comté, aged Gouda or mature cheddar also pair beautifully with its cassis and cedar notes. Serve at 16–18°C (60–64°F) and decant for 1–2 hours in its youth to allow the aromatics to blossom and the tannins to soften. Older bottles can be decanted more gently shortly before serving, primarily to separate any sediment.
