Production
The fruit for this Grand Cru is sourced from the legendary Chambertin climat in Gevrey-Chambertin, in the northern Côte de Nuits. Here, the vines root deeply into well-drained, limestone-rich marl soils with a high proportion of fractured rock, contributing both power and a profound mineral character to the wine. The cool continental climate, moderated by the slope’s exposure and drainage, allows Pinot Noir to ripen slowly, building aromatic complexity and natural freshness. Yields in 2016 were naturally reduced by challenging spring conditions, concentrating the remaining grapes. Harvesting at Domaine Jacques Prieur is carried out by hand, with strict sorting in the vineyard and at the cellar to ensure only perfectly ripe, healthy clusters are used. Fermentation is traditionally Burgundian: whole berries or a proportion of whole clusters (depending on the vintage and parcel) are gently vinified in temperature-controlled vats, with careful extraction through remontage and pigeage to preserve finesse. The wine is then aged in high-quality French oak barrels—typically with a significant but judicious proportion of new oak—to add structure and aromatic complexity without overshadowing the terroir. Bottling is done with an eye to preserving purity, balance, and the distinct identity of Chambertin.
