2016 Château Le Sèpe Cuvée Initiale is a characterful red Bordeaux that combines classic Right Bank charm with meticulous, low-intervention vineyard work. Crafted from Merlot, Cabernet Sauvignon and a touch of Malbec, it offers a fruit-driven, finely balanced style that remains true to its terroir. Grown high above the Dordogne on clay-limestone slopes and now farmed biodynamically, this cuvée reflects a thoughtful, quality-over-quantity approach that stands apart from more industrial Bordeaux.

Tasting Notes
In the glass, the 2016 Château Le Sèpe Cuvée Initiale shows a deep, vivid ruby-red color with bright reflections at the rim, hinting at both concentration and freshness. The nose is expressive and inviting, with ripe red fruits at the core—think cherry and red plum—layered with blackcurrant, subtle vanilla, and gentle sweet spice from its time in French oak. A touch of floral and light herbal notes adds lift and complexity. On the palate, this is a medium-bodied Bordeaux with a lively, well-integrated acidity that keeps the fruit bright and energetic. Supple, polished tannins frame flavors of red berries, cassis, and a hint of black cherry, supported by nuances of vanilla, toasted oak and a faint cocoa edge. The finish is generous and neatly balanced, lingering on ripe fruit and gentle spice rather than heavy oak. Drinking beautifully now, the 2016 has the structure to develop additional complexity over the next 3–5 years, making it a solid choice to enjoy through around 2029, depending on storage.

Production
The vines of Château Le Sèpe are rooted in clay- and limestone-rich soils at about 100 meters above the Dordogne riverbed, a relatively high position that helps them escape river fog and benefit from constant natural ventilation. This healthy air flow, combined with a fully biodynamic approach and no anti-botrytis treatments, allows the estate to forego chemical interventions and focus on careful, manual work in the vineyard, including aggressive green harvesting and canopy management—especially on the side facing the rising sun—to limit yields and concentrate flavor. Grapes for the red Le Sèpe blend (Merlot, Cabernet Sauvignon, and around 15% Malbec) are harvested at night to preserve freshness, then carefully sorted before going into tank. Fermentation is conducted in thermoregulated vessels with daily remontage (pumping over) to gently extract color, aromas and fine tannins. The wine is then matured for about 12 months in French oak barrels from renowned coopers such as Taransaud, Cadus, Darnajou and Bel-Air, in a mix of 225L and 400L casks to balance integration of oak with purity of fruit.

Food & Serving
This cuvée’s medium body, fresh acidity and silky tannins make it a versatile partner at the table. It pairs particularly well with classic meat dishes such as entrecôte, grilled duck breast, roast lamb or game, as well as with semi-soft to hard cheeses like Langres, Tome d’Auvergne and aged Gouda. It also works nicely with dishes featuring red berries, including savory sauces or desserts built around red fruit. Serve at 16–18°C (about 60–64°F). A short decant of 30–45 minutes will help open the aromatics and soften the tannins, especially if enjoyed on the younger side.
