In the glass, the 2015 Château Latour is deep, opaque garnet with a vivid, almost inky core and a narrow, youthful rim. The nose is intensely layered: blackcurrant and cassis at the forefront, supported by black cherry, graphite, cedar, tobacco leaf and warm spices, with hints of violets, crushed stone and a discreet touch of cigar box. On the palate, this is full-bodied and wonderfully structured, with a dense, finely woven tannic backbone that feels both authoritative and refined. Dark berry fruit—cassis, blackberry and plum—unfolds slowly, joined by notes of pencil shavings, cocoa, espresso and a saline, mineral edge that speaks clearly of Pauillac gravel. Production
Château Latour’s Grand Vin is sourced primarily from the historic Enclos, a single contiguous vineyard surrounding the château, planted on deep gravel soils over a clay subsoil that provides excellent drainage and natural vine stress—ideal conditions for Cabernet Sauvignon. Harvesting is carried out parcel by parcel, typically by hand, allowing the team to pick each block at optimal ripeness. In the cellar, the grapes are meticulously sorted before fermentation in temperature-controlled vats, with each parcel vinified separately to preserve its character. After fermentation and maceration, the wine is aged in a high proportion of new French oak barrels, where it undergoes malolactic fermentation and extended élevage. Throughout this process, numerous tastings and strict selections ensure that only the most exceptional lots make it into the Grand Vin, resulting in a wine of remarkable purity, structure and longevity.

Think classic roast lamb with rosemary and garlic, dry-aged ribeye or côte de boeuf, venison or other game, as well as dishes featuring truffle, wild mushrooms or rich jus-based sauces. Serve at 16–18°C (60–64°F) for optimal expression; in its youth, decanting for 2–3 hours helps soften the tannins and open the bouquet. As the wine matures, a shorter decant—mainly to remove sediment—will be sufficient.
