Tasting Notes
In the glass, the 2016 Bond Melbury shows a deep, opaque garnet-purple hue that hints at both concentration and youth. The nose is immediately expressive and layered: ripe black cherries, mulberries, and damson plums unfold alongside blackcurrant, warm cinnamon toast, and a subtle Sichuan pepper lift, with underlying notes of graphite, crushed stone, and a touch of cedar.
On the palate, this is medium to full-bodied yet seamlessly poised, with an elegance that belies its intensity. The core is packed with vibrant, crystalline black and blue fruits wrapped in fine-grained tannins and supported by fresh, mouthwatering acidity. Mineral nuances—wet slate, crushed rock, and a faint saline edge—thread through the mid-palate and carry into a long, focused finish. The 2016 vintage is known for its balance and structure, making this Melbury a superb candidate for cellaring; it will reward patience over 15–25+ years, gaining complexity, softness of tannin, and added savory and tertiary notes with time.
Production
Melbury Vineyard sits on the slopes of Pritchard Hill, high above the eastern side of Napa Valley with a commanding view over Lake Hennessey. The site combines sun-drenched exposures with well-drained, rocky hillside soils—predominantly fractured rock and loam—that naturally limit yields and concentrate flavor. Vines are carefully managed and hand-harvested in small lots at optimal ripeness to preserve both freshness and complexity. In the winery, the Cabernet Sauvignon is vinified with meticulous attention to detail: gentle sorting and destemming, small-batch fermentations, and extended maceration to extract fine tannins rather than harshness. The wine is then aged in predominantly new French oak barrels, where it slowly integrates structure and oak spice while maintaining clarity of fruit and an articulate expression of its singular terroir.

The 2016 Bond Melbury is a natural partner for refined, richly flavored dishes that can match its depth without overwhelming its elegance. Think dry-aged ribeye, roast lamb with rosemary and garlic, venison loin, or slow-braised short ribs; it also pairs beautifully with truffle-infused dishes, wild mushrooms, and well-aged hard cheeses such as Comté or aged Gouda. Serve at 16–18°C (60–64°F) to highlight both aromatic detail and texture. Given its youth and structure, decanting for 1.5–3 hours is recommended if enjoyed now; for bottles with additional age, a shorter, more gentle decant will suffice to open up the bouquet without losing delicacy.
