Tasting Notes
In the glass, the wine shows a deep, vibrant ruby hue with garnet reflections beginning to emerge, hinting at its decade of graceful evolution. The nose is layered and complex: wild red and black berries, Morello cherry and blackcurrant mingle with violets, rose petals, and a distinct mineral edge. Subtle notes of forest floor, truffle, fine spices, and a touch of sandalwood or cedar from élevage add further intrigue as the wine opens.
On the palate, this Bonnes-Mares is both structured and refined, delivering concentrated flavours of ripe cherry, blackberry and raspberry coulis woven through with savoury hints of tea leaf, earth, graphite, and fine herbs. The tannins are firm yet beautifully polished, carrying the wine with a sense of drive and precision, while the fresh, linear acidity lifts the finish and keeps it exceptionally long and persistent. Already entering a lovely drinking window, the 2014 still has the backbone and energy to evolve further; with proper cellaring, it should continue to develop additional tertiary notes and complexity over the next 10–15 years.
Production
Bonnes-Mares is a Grand Cru climat straddling the villages of Chambolle-Musigny and Morey-Saint-Denis, set on east-facing slopes around 270–280 metres in altitude. The vineyard benefits from excellent exposure to the morning sun, good ventilation from northern breezes and natural protection from harsher western winds and rain, contributing to slow, even ripening and healthy fruit. The soils are a complex mosaic of limestone, clay and marl, giving both power and minerality to the wine. Grapes are typically harvested by hand at optimal ripeness, with rigorous sorting in the vineyard and at the winery to retain only the finest Pinot Noir bunches. Vinification usually involves a careful, temperature-controlled fermentation—often with a proportion of whole clusters to enhance aromatic lift and structure—followed by extended maturation in French oak barrels, a portion of which are new, to shape the tannins and add subtle spice without overwhelming the purity of the fruit.
Food & Serving
This Grand Cru Burgundy is best matched with refined, flavourful dishes that mirror its depth and complexity: roast duck or guinea fowl, veal with morel mushrooms, lamb saddle, or fine cuts of beef prepared simply will all work beautifully. It also shines alongside game birds, truffled poultry, or mature, earthy cheeses such as Comté, aged Gruyère or mild washed-rind cheeses. Serve at 15–16°C (59–61°F) to highlight its aromatics and finesse. For a bottle of this age and pedigree, decanting for around 45–60 minutes before serving can help the wine fully unfurl its bouquet and harmonise tannins, especially if opened in its youth relative to its long aging potential.
