The blend is typically led by Cabernet Franc, complemented by Cabernet Sauvignon, all farmed with meticulous, low-yield practices to maximize concentration and site expression. Grapes are harvested by hand in small lots at optimal ripeness, then sorted berry-by-berry to ensure only pristine fruit makes it into the fermenters. Vinification is classic and restrained: native or carefully selected yeasts, gentle extraction, and élevage in French oak barrels (a portion new) for an extended period, allowing the wine to gain texture and aromatic complexity without losing its freshness and purity.
