Tasting Notes
In the glass, the 2012 Cuvée Elisabeth Salmon Rosé shows a delicate, luminous salmon-pink hue with copper highlights and an ultra-fine, persistent mousse. The nose opens with wild strawberries, raspberries and blood orange, layered with notes of rose petals, citrus zest, chalky minerality and subtle pastry tones—think brioche and almond cream.
On the palate, this is both precise and generous: vibrant red berry fruit, pink grapefruit and pomegranate are framed by a laser-like acidity and a beautifully silky texture. Underneath the fruit, there is a core of chalk, spice and gentle herbal notes that add complexity and length. The finish is long, dry and mouthwatering, with lingering notes of citrus, red currant and a hint of saline minerality. Still youthful, the 2012 vintage has significant aging potential; cellaring for 10–20 years from release will allow the wine’s floral, spicy and autolytic (brioche, hazelnut) nuances to develop further.
Production
Cuvée Elisabeth Salmon Rosé 2012 is typically sourced from top Pinot Noir and Chardonnay sites in the Montagne de Reims and the Côte des Blancs, focusing on grands and premiers crus with chalk-rich soils that impart tension and precision. The Pinot Noir, some of which is vinified as red wine from select plots (notably around Mareuil-sur-Aÿ), gives the cuvée its structure, color and red-fruit character, while the Chardonnay contributes finesse, freshness and length. Grapes are hand-harvested to ensure optimal ripeness and careful selection in the vineyard. After gentle pressing and cool, slow fermentation—primarily in temperature-controlled vessels, with a portion sometimes raised in older oak to add texture—the wine undergoes an extended aging on lees in bottle, often close to a decade, before disgorgement. A restrained dosage is used to maintain purity, elegance and a bracing, dry finish characteristic of Billecart-Salmon’s style.
Food & Serving
This is a gastronomic rosé Champagne that shines at the table. Pair it with refined dishes such as tuna tataki, salmon tartare, langoustines, scallops, lobster, or sushi and sashimi, where its acidity and fine bubbles cut through richness. It also works beautifully with duck breast, roasted poultry with berry jus, veal carpaccio or delicate lamb dishes, and can complement savory tarts or aged hard cheeses. For dessert, think fresh berries with light cream rather than anything overly sweet. Serve well-chilled but not icy, ideally at 8–10°C (46–50°F), in a white wine glass or large tulip to allow the aromas to unfold. Decanting is not essential, but opening the bottle 15–20 minutes before serving or giving it a brief, gentle carafe can help reveal additional complexity in this structured 2012 vintage.
