The 2012 Bénédicte et Stéphane Tissot Château-Chalon is a benchmark Vin Jaune from one of Jura’s most admired artisan producers. Crafted entirely from Savagnin and aged under a natural veil of yeast, it captures the singular character of the Château-Chalon appellation in a concentrated, age‑worthy style. This bottle offers an exceptional glimpse into one of France’s most traditional and distinctive wine styles, made only in the best vintages and in very limited quantities.

Tasting Notes
In the glass, this Château-Chalon shows a deep golden to burnished straw color that hints at its extended barrel aging. The nose is intensely expressive, with classic Vin Jaune aromas of toasted walnuts, hazelnut, curry leaf, saffron, dried yellow flowers, green almond, and a light oxidative note reminiscent of fino sherry, supported by nuances of dried apricot, lemon zest, and a saline mineral edge. On the palate, the wine is powerful, dry, and incredibly persistent, with a taut spine of acidity that keeps the richness in perfect balance. Flavors of walnut, roasted nut, Comté rind, turmeric, dried citrus peel, and subtle spice unfold in layers, carried by a firm, mineral core. The texture is mouth‑coating yet lifted, finishing with a long, savory, almost umami aftertaste. 2012 is already showing beautifully, but this style is renowned for its extraordinary longevity: properly cellared, it can evolve gracefully for several decades—20, 30, even 40+ years—gaining complexity and depth over time.

Production
Sourced from steep, limestone- and marl-rich slopes in the hallowed terroir of Château-Chalon in France’s Jura region, this wine reflects one of the most distinctive vineyard sites in France. The cool continental climate and poor, stony soils naturally limit yields, concentrating flavor and acidity in the Savagnin grapes. Harvest is typically done by hand, with careful selection of perfectly healthy, ripe fruit. After fermentation, the wine is aged for more than six years in old, neutral oak barrels that are not topped up. During this time, a veil of yeast (voile) forms on the wine’s surface, protecting it partially from oxidation and contributing the characteristic nutty, spicy, and savory aromatics. Bottling is traditionally done in the region’s signature 620 ml Clavelin bottle, the legal format for Vin Jaune.

Food & Serving
This Château-Chalon is a reference wine for pairing with aged cheeses, especially 24–36‑month Comté, as well as mature Gruyère, Beaufort, and other firm, nutty mountain cheeses. It also shines alongside earthy dishes such as morel mushrooms in cream sauce, truffle-based preparations, poultry in rich cream or Vin Jaune sauce, veal blanquette, and savory puff pastry or pâté en croûte. Its umami depth makes it a superb partner for richly flavored seafood like lobster or scallops in butter and cream, and even for subtly spiced curries. Serve slightly cool, around 13–15 °C (55–59 °F), rather than too cold, to allow the aromatics to fully open. Decanting for 30–60 minutes before serving can help the wine unfold, especially in its youth, and an opened bottle will often continue to improve over several days if kept cool and sealed.
