Tasting Notes
In the glass, the 2011 Comtes de Champagne Blanc de Blancs shines a luminous pale gold with fine, persistent bubbles that form an elegant, refined mousse. The nose is immediately inviting and layered: ripe lemon and white peach are wrapped in notes of brioche, almond cream, and delicate acacia blossom, with underlying hints of chalk dust, oyster shell, and a touch of vanilla from long lees aging.
On the palate, this cuvée is both generous and precise, with a creamy texture carried by a vibrant, chalky backbone typical of the Côte des Blancs grands crus. Flavors of citrus zest, crisp pear, stone fruit and mirabelle plum are interwoven with pastry, toasted hazelnut, subtle spice and a saline, mineral lift on the long, mouthwatering finish. The 10 years of cellar aging have brought harmony and complexity without sacrificing freshness. It is drinking beautifully now, with an additional 8–10 years (or more) of aging potential for those who appreciate more developed, tertiary nuances of honey, toasted brioche and dried flowers.
Production
Comtes de Champagne Blanc de Blancs 2011 is crafted exclusively from Chardonnay grown in grand cru vineyards of the Côte des Blancs, including renowned crus such as Avize, Le Mesnil-sur-Oger, Oger, Cramant and Chouilly. Here, the deep chalk subsoils, cool climate and east- to southeast-facing slopes give the grapes their hallmark tension, purity and fine-boned structure. Grapes are harvested by hand at optimal ripeness to preserve acidity and aromatic delicacy. Only the first pressing (the purest cuvée) is used, ensuring exceptional finesse and clarity of flavor. Fermentation takes place in stainless steel to retain freshness, with a small proportion sometimes aged in oak to add subtle texture and complexity. The wine then undergoes its second fermentation in bottle and is aged on the lees for a full decade in Taittinger’s ancient chalk cellars beneath Reims, allowing the mousse to refine and the aromatics to deepen before disgorgement and release.
Food & Serving
This 2011 Comtes de Champagne Blanc de Blancs is an outstanding partner for refined seafood and delicate dishes where its precision and texture can truly shine. Serve it alongside oysters, scallop carpaccio, caviar, sushi and sashimi, turbot or sole in beurre blanc, or lobster with butter and citrus. It also pairs beautifully with fine poultry dishes, truffle-inflected cuisine and aged hard cheeses such as Comté or Parmesan. For optimal expression, serve well-chilled at 9–11 °C (48–52 °F). Young bottles benefit from 20–30 minutes in the glass rather than a long decant; if you choose to carafe, do so gently and briefly, just before serving, to preserve the delicate mousse and aromatic detail.

Founded in 1734 by Jacques Fourneaux, Taittinger is one of Champagne’s oldest houses and one of the few still firmly in family hands. The modern Taittinger story truly began in 1932, when Pierre Taittinger acquired the house and positioned it around a Chardonnay-driven style that prized lightness, finesse and elegance. This philosophy led to the creation of Comtes de Champagne Blanc de Blancs in 1952, one of the very first prestige cuvées made entirely from grand cru Chardonnay and now regarded as a reference point for Blanc de Blancs Champagne. The house is run from Reims by Pierre-Emmanuel Taittinger and his children Vitalie and Clovis, who famously brought the estate back into family ownership in 2006 to safeguard its values and quality. With 289 hectares of prime vineyards and a strong focus on Côte des Blancs Chardonnay, Taittinger has earned a reputation for consistency, refinement and artistic flair—seen not only in its wines, but also in its celebrated artist-designed Collection series released in exceptional years.
