Tasting Notes
In the glass, this Château-Chalon shows a deep golden hue with burnished amber highlights, a visual clue to its extended maturation. The nose is intensely expressive and savory, with classic Vin Jaune aromas of toasted walnuts, roasted hazelnuts, curry spice, dried yellow fruits, green almond, and hints of Comté rind, alongside subtle oxidative notes of bruised apple, saffron, and a saline minerality. On the palate, the wine is powerful yet taut, with a dry, bone-structured profile supported by vibrant acidity. Flavors echo the nose: walnut and almond, dried apricot, citrus peel, fenugreek, and gentle oxidative tones intertwined with chalky minerality. The texture is both concentrated and nervy, finishing very long and savory with a lingering nuttiness and spice. Like all great Château-Chalon, the 2011 has exceptional aging potential; properly stored, it can easily develop for several more decades, gaining even greater complexity and nuance over time.

Production
Sourced from the steep limestone and marl slopes of the Château-Chalon appellation in France’s Jura region, this wine reflects a terroir famed for its poor, fossil-rich soils and cool continental climate. Yields are kept low, and grapes are harvested by hand at full physiological ripeness to ensure concentration and natural acidity. Vinification is traditional for Vin Jaune: after fermentation, the Savagnin is aged for more than six years in small, old oak barrels that are never topped up, allowing a natural veil of yeast (voile) to form on the wine’s surface. This slow, oxidative maturation under voile is what gives Château-Chalon its distinctive nutty, spicy, and saline character without fortification.

Food & Serving
This 2011 Château-Chalon is a classic partner for aged Comté and other hard Jura cheeses, as well as nutty alpine cheeses and dishes featuring walnuts or morels. It pairs beautifully with cream-based poultry dishes, veal in morel sauce, rich seafood (such as lobster or scallops in cream), and subtly spiced curries or Asian cuisine that highlights umami rather than heat. Serve slightly cool, around 14–16 °C (57–61 °F), to allow the aromatics to fully unfold. Decanting for 30–60 minutes can help the wine open up, especially in its youth, though mature bottles should be handled gently and tasted first before deciding whether to decant.
