Tasting Notes
In the glass, the 2008 Cuvée Hemera shows a bright, pale gold hue with a fine, persistent mousse and delicate, lace‑like bubbles. The nose is both precise and complex: citrus zest, white flowers and crunchy green pear are layered with notes of freshly baked brioche, toasted hazelnuts, chalky minerality and a hint of honey and dried apricot that speak to its extended aging.
On the palate, this Champagne is taut and vibrant yet beautifully creamy, marrying the tension of the 2008 vintage with Henriot’s signature elegance. Expect flavors of lemon curd, golden apple and ripe stone fruits, intertwined with almond, pastry cream, subtle spice and a saline, chalky spine that gives real length and finesse. The acidity is finely etched, ensuring freshness and clarity, while the bead is silky and persistent. Already harmonious but still youthful, this cuvée has excellent aging potential and will continue to gain complexity over the next 10–15 years or longer if well cellared.
Production
Cuvée Hemera 2008 is sourced exclusively from six historic Grand Cru villages in Champagne: Mailly, Verzy and Verzenay for Pinot Noir, and Avize, Chouilly and Le Mesnil‑sur‑Oger for Chardonnay. These sites sit on pure chalk and chalk‑clay soils with ideal exposure, giving grapes of great intensity, minerality and finesse. The fruit is hand‑harvested at optimal ripeness and carefully sorted before being gently pressed, using primarily the first pressing to capture the purest juice. Vinification takes place in temperature‑controlled stainless steel to preserve freshness and precision, with separate vinification of each cru and grape variety before blending. The final cuvée, typically a near‑equal blend of Chardonnay and Pinot Noir, is then bottled for an exceptionally long maturation on the lees—often around a decade—before disgorgement, with a restrained dosage to highlight the natural tension and chalky character of the 2008 vintage.
Food & Serving
This is a gastronomic Champagne that shines at the table. Pair it with refined dishes such as oysters, scallops with beurre blanc, turbot or sole, lobster, sashimi and crudo, or delicate poultry with a light cream sauce. It is also superb with aged Comté, Parmesan or mild, nutty hard cheeses. Serve well‑chilled but not icy, ideally around 9–11°C, in fine Champagne flutes or, better yet, tulip‑shaped white wine glasses to fully appreciate the aromas. Decanting is not essential, but opening the bottle 20–30 minutes before serving or letting it breathe in the glass will help the bouquet unfold and reveal its full complexity.
