Sourced from exceptional Grand Cru vineyards and produced in extremely limited quantities, it stands as a benchmark for serious, age-worthy rosé. The “Nec Plus Ultra” name—Latin for “nothing beyond”—signals Bruno Paillard’s most exacting standards in both selection and winemaking, making this a bottle for true Champagne connoisseurs.

Tasting Notes
In the glass, this rosé Champagne shows a luminous, deep salmon-pink hue with copper highlights and a fine, persistent bead of tiny bubbles forming a delicate mousse. The color reflects both concentration and maturity, hinting at the complexity to come. The nose is layered and refined, opening with wild strawberry, raspberry, and redcurrant, followed by blood orange, dried rose petals, and a touch of pomegranate. With air, more savoury and patisserie notes emerge—brioche, toasted hazelnut, subtle spice, and a hint of chalky minerality that speaks clearly of Champagne’s limestone soils. On the palate, the wine is simultaneously powerful and precise, with a vibrant backbone of 2008’s hallmark acidity. Ripe red berries, citrus zest, and pink grapefruit are woven with nuances of dried apricot, almond, and delicate smokiness from extended lees aging. The texture is creamy yet taut, with a long, saline and mineral-driven finish. Already beautifully expressive, this cuvée has significant aging potential; well-stored bottles can continue to evolve gracefully for another decade or more, gaining additional complexity and depth.

Production
Nec Plus Ultra Rosé is typically sourced from a strict selection of Grand Cru vineyards in the heart of Champagne, where chalk-rich soils, cool climate, and ideal exposures deliver concentration, tension, and finesse. Only the first pressing (la cuvée) is used, ensuring purity and delicacy of juice. Grapes—primarily Pinot Noir supported by Chardonnay—are hand harvested at optimal ripeness, parcel by parcel. For the rosé component, Bruno Paillard is known to vinify a portion of Pinot Noir as still red wine, which is then blended with white base wines to achieve the desired color, structure, and aromatic profile. Fermentation takes place in a mix of stainless steel and oak, with careful handling to preserve freshness. The wine then undergoes its second fermentation in bottle and spends an exceptionally long period on lees—often a decade or more—before disgorgement, followed by additional post-disgorgement aging. Dosage is kept very low to let the character of the terroir and the 2008 vintage shine through.

Food & Serving
This is a gastronomic rosé Champagne that truly comes into its own at the table. It pairs beautifully with refined dishes such as lobster, langoustines, or scallops, especially when served with citrus or delicate butter sauces. It also complements roasted poultry, veal, or lightly gamey meats like duck or squab, as well as richer seafood preparations and high-quality charcuterie. Mature hard cheeses, like aged Comté or Parmesan, and lightly truffled dishes are also superb partners. Serve well-chilled but not too cold—around 10–12°C (50–54°F)—to allow the aromatics to fully express. Decanting isn’t essential, but opening the bottle 15–20 minutes before serving, or pouring the first glass and letting it sit, can help the wine reveal its full complexity.

Maison Bruno Paillard is a relatively young but highly respected Champagne house, founded in 1981 by Bruno Paillard, who sought to create Champagnes defined by purity, finesse, and a strong sense of place. Based in Reims, the estate works with an outstanding selection of Premier and Grand Cru vineyards across Champagne, many of them farmed sustainably, with a focus on low yields and meticulous grape selection.
