The 2008 Bruno Paillard N.P.U. ‘Nec Plus Ultra’ Extra Brut Magnum is one of Champagne’s great prestige cuvées, crafted only in outstanding vintages and produced here in the especially celebrated 2008 harvest. Presented in magnum, it offers even slower, more graceful development and added depth, making it a superb choice for collectors and special occasions. Conceived as the ‘nothing beyond this’ expression of the house, N.P.U. is the result of uncompromising selection and long aging to showcase Champagne at its most refined and complex.

Tasting Notes
In the glass, the 2008 N.P.U. shows a luminous, pale golden hue with fine, persistent bubbles forming an elegant, continuous mousse. The bead is ultra‑delicate, a hallmark of long lees aging and meticulous craftsmanship. The nose opens with striking precision: notes of lemon zest, ripe orchard fruit and white peach layered with acacia blossom, toasted brioche and fresh hazelnut. With air, more complex aromas emerge—chalky minerality, subtle spice, dried citrus peel and a hint of nougat and smoke from its long evolution in bottle. On the palate, this Extra Brut is taut, vertical and intensely focused. The 50/50 blend of Chardonnay and Pinot Noir delivers both tension and breadth: vibrant citrus, green apple and pear are framed by a saline, chalky backbone, while Pinot Noir contributes structure, red fruit undertones and a whisper of almond and pastry cream. The dosage is very low, allowing the purity of the fruit and the character of the 2008 vintage to shine through with crystalline clarity. The finish is long, dry, and mouth‑watering, with lingering notes of citrus, spice and crushed stone. Thanks to the concentration of the 2008 vintage, the magnum format and the extended cellar aging prior to release, this wine has a very long life ahead. It is already remarkably expressive but will continue to develop additional layers of truffle, honey, roasted nuts and brioche over the next 10–20 years and beyond when stored in proper cellaring conditions.

Production
The grapes for N.P.U. come exclusively from seven of Champagne’s most coveted Grand Cru villages: Oger, Le Mesnil‑sur‑Oger, Chouilly and Cramant on the Côte des Blancs, and Verzenay, Mailly‑Champagne and Bouzy in the Montagne de Reims. These sites combine pure chalk subsoils, ideal exposures and old vines to deliver both intensity and finesse. Harvested by hand in mid‑September 2008, the fruit benefited from a long, cool growing season and a dry, airy harvest period that preserved freshness and acidity. Bruno Paillard vinifies N.P.U. with extreme rigor: fermentation occurs in small, seasoned oak barrels, where the base wines spend their first 10 months, gaining texture and subtle complexity without overt oak flavors. After blending equal parts Chardonnay and Pinot Noir, the wine is bottled for secondary fermentation and then aged a full 10 years on its lees in the cellar, followed by an additional 2 years’ rest after disgorgement. The Extra Brut dosage is kept minimal to respect the character of the vintage and the chalk‑driven terroirs.

Food & Serving
This is a gastronomic Champagne designed for the table. It pairs beautifully with refined dishes such as oysters, caviar, scallop carpaccio, lobster, turbot or sole with beurre blanc, as well as free‑range roast chicken with morels, veal sweetbreads, or delicate truffle dishes. Mature hard cheeses like Comté or aged Parmesan also work wonderfully with its depth and structure. Serve well‑chilled but not icy, ideally around 9–11°C (48–52°F), to allow its aromas to fully unfold. Decanting is not essential, but for a young bottle—especially in magnum—pouring it into a chilled, wide‑bowled Champagne glass or gently carafing 15–20 minutes before serving can help the wine open and show its full complexity.
