Tasting Notes
In the glass, the 2005 Château Ausone shows a deep, opaque garnet core with a bright, youthful rim that still hints at its remarkable longevity. The nose is unusually vibrant and complex for its age, unfolding in layers of incense, ripe blueberries, blackberries and redcurrants, supported by nuances of licorice, graphite, crushed stone and subtle sweet spice from fine French oak. On the palate, this is an intense yet remarkably refined wine, combining immense concentration with a silken, almost weightless texture. The Merlot delivers plush, dark fruit and richness, while the high proportion of Cabernet Franc adds aromatic lift, precision and a cool, mineral backbone. Expect dense black and blue fruits, violet, anise, tobacco leaf and a long, saline, limestone-driven finish. The tannins are ultra-fine but still firm, perfectly integrated with fresh acidity, suggesting an extraordinary aging potential. Production
Château Ausone’s vineyards lie on the coveted limestone plateau and steep south-facing slopes of Saint-Émilion, a terroir renowned for producing wines of remarkable finesse, minerality and longevity. The estate is planted mainly with Merlot and an unusually high percentage of Cabernet Franc, a key to Ausone’s signature aromatic intensity and structure. Yields are kept very low, and all grapes are meticulously harvested by hand to ensure only perfectly ripe fruit reaches the cellar. Vinification combines traditional craftsmanship with modern precision: small-batch fermentations allow for parcel-by-parcel selection, and gentle extraction preserves purity and elegance. The Grand Vin is then aged in new French oak barriques, where it slowly gains additional layers of complexity, texture and aromatic depth, before being bottled in very limited quantities.

Food & Serving
This 2005 Château Ausone is best showcased alongside refined, richly flavored dishes such as roast lamb with herbs, slow-braised beef or veal, pigeon or duck, truffle-infused dishes, or classic French preparations featuring wild mushrooms. It also pairs beautifully with aged hard cheeses such as Comté or matured Gouda. Serve at 16–18°C (60–64°F) in large Bordeaux stems to allow the wine to fully express its bouquet. Decanting is strongly recommended: 2–3 hours for current drinking to open up the aromatics and soften the structure, and potentially longer if opened in the near term, while older, well-cellared bottles should be decanted more gently and for a shorter period.
