Pavillon Blanc is sourced from approximately 12 hectares of Sauvignon Blanc planted on the historic Château Margaux estate in the Médoc, Bordeaux. The vineyards sit on the region’s signature gravelly soils, mixed with clay and limestone, which provide excellent drainage and help produce intensely flavored yet refined white wines. In 1987, the growing season was unsettled, with little extended heat, but a crucial warm spell in September allowed the Sauvignon Blanc to ripen before the October rains.
Harvesting at Château Margaux is typically done by hand, with meticulous grape selection in the vineyard and at the winery to ensure only the healthiest fruit is used—especially vital in a challenging vintage like 1987, when picking began around 5 October under cool, showery conditions. The wine is traditionally fermented in temperature‑controlled conditions, often in oak barrels, followed by aging on fine lees to build texture and complexity. The result is a structured, age‑worthy white that retains the aromatic purity of Sauvignon Blanc while gaining depth and subtle oak integration over time.

This mature Pavillon Blanc is best paired with refined, delicately flavored dishes where its nuance can shine. Serve at around 10–12°C (50–54°F) to balance freshness with aromatic complexity—slightly cooler to start, allowing the wine to warm gently in the glass. Given its age, decanting for 20–30 minutes is advisable: pour carefully off any sediment to allow the bouquet to open, but avoid extended exposure that could tire the wine.
