Copenhagen Sparkling Tea Company makes sparkling tea that is poured like a sparkling wine: organic teas brewed one by one and finished with fine bubbles. Here you will find the alcohol-free classics Blå, Lysegrøn and Lyserød.
Copenhagen Sparkling Tea Company: sparkling tea created by a sommelier
The brand is the work of Danish sommelier Jacob Kocemba. The idea came to him in 2010 in a Michelin-starred restaurant in Copenhagen, when he could not find a wine to match a particular dessert and started building a pairing from tea instead. That experiment grew into a drink blended with the same care as a cuvée. In 2017 he was joined by entrepreneur Bo Sten Hansen as a partner, to take sparkling tea beyond the restaurant world.
Copenhagen Sparkling Tea has since become a category of its own, sitting between tea and sparkling wine. Every sparkling tea we carry is gathered on our sparkling tea page.
How Copenhagen Sparkling Tea is made from organic tea
Everything starts with the tea. Each variety is brewed separately, at its own temperature and for its own steeping time, so it gives its aroma without turning bitter. Only then are the teas blended, in small batches. Across the range, up to thirteen organic teas are used, from white and green tea to oolong, Darjeeling, hibiscus and herbs.
A small base of grape must adds structure and length, and Blå gets a dash of lemon juice. The bottles are carbonated to a pressure of five to five and a half bar, the same as a sparkling wine. The result is fresh and lively, with a fine mousse and the gentle grip of tea tannin.
The pale colour names are the alcohol-free versions. The house also makes versions of about 5% ABV, with a dash of dry white wine and deeper colour names.
Blå, Lysegrøn and Lyserød: three alcohol-free styles
Blå
Blå brings together jasmine, white tea and Darjeeling. Floral, fresh and lightly citrusy, it is a versatile aperitif and the natural first bottle to try.
Lysegrøn
Lysegrøn is built on green sencha and citrus. It is the freshest and greenest style in the range, lovely with vegetables and fresh herbs.
Lyserød
Lyserød combines Silver Needle white tea with oolong and hibiscus. It is considered the driest version, with red berries and a round texture. If you are looking for grape-based alternatives, browse our non-alcoholic wine.
Serving and food pairing for Copenhagen Sparkling Tea
Serve sparkling tea well chilled, at eight to ten degrees Celsius, in a white wine glass or a Champagne flute so the aroma and bubbles can show. Its fresh acidity and tea tannin make it a genuine food partner: shellfish, sushi, ceviche, delicate white fish, herb salads and mild, creamy cheeses all work well. It is just as good as a welcome drink as it is through a whole alcohol-free dinner, and an easy choice when someone at the table is driving or skipping wine. For an alcohol-free bar, it sits naturally beside our non-alcoholic spirits.
