Thanks to its structure and concentration, this Amarone can be enjoyed now but also has the potential to develop further in bottle over the coming years.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eProduction\u003c\/strong\u003e\u003cbr\u003eThe grapes come from Zenato’s Costalunga estate in the Valpolicella Classico area, spanning the communes of Sant’Ambrogio, Negrar, Pedemonte, Fumane, San Pietro in Cariano and Marano. Corvina, Rondinella, Oseleta and Croatina grapes are hand-harvested and carefully selected before being dried for approximately three months. This traditional appassimento process reduces the water content of the grapes and concentrates their sugars and flavours. Following fermentation, the wine matures for 30 months in oak barrels and then spends a further 12 months ageing in bottle before release.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eFood \u0026amp; Serving\u003c\/strong\u003e\u003cbr\u003eServe at approximately 18–20°C after allowing the wine to come gently to temperature.
