The vines are trained using the Guyot system; harvesting methods are not specified. Some bunches are fermented whole, while the rest are destemmed and crushed. Fermentation takes place in stainless steel with around 20 days of skin maceration and pump-overs, followed by malolactic fermentation in wood and 24 months of ageing in large casks.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eFood \u0026amp; Serving\u003c\/strong\u003e\u003cbr\u003eServe with robust dishes such as game, roast or braised red meat, and mature cheeses.
