The palate is dry and full-bodied, with generous fruit, lively acidity, firm yet polished tannins and a savoury mineral note. Its finish is intense and persistent.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eProduction\u003c\/strong\u003e\u003cbr\u003eThe grapes come from south-east-facing, low-yielding old vines in Scarrone, in the heart of the Barolo area. Vineyard work follows sustainable principles, and the site is in the process of conversion to organic farming. After a cold pre-fermentation maceration, fermentation takes place in stainless steel for around two weeks, with pigeage and pump-overs.
