A low dosage and 36 months on the lees give this grower Champagne a poised, savoury character and a notably long finish.

Tasting Notes
Pale in appearance, with a complex, lightly reductive nose of crisp orchard fruit, ripe citrus, white flowers, anise and freshly baked bread. The bouquet has an elegant, white-Burgundy-like quality.

Production
Medium- to full-bodied, with a fleshy, layered texture and a concentrated, clearly defined mid-palate. Lively and persistent, it finishes with a pronounced saline note. The wine is already showing beautifully; a specific further ageing window is not provided.

Food & Serving
Serve well chilled, around 8–10°C, with oysters, scallops, simply prepared fish or roast poultry. Its texture and savoury, saline finish also suit aged hard cheeses. Decanting is not essential; serve in a white-wine glass to allow the aromas to open.

Producer
Ulysse Collin is a grower-producer in Champagne, known for bottlings that express individual vineyard sites.
