The grapes are hand-harvested and pressed immediately, after which the must undergoes a slow, temperature-controlled fermentation in large wooden casks. Malolactic fermentation takes place in the same vessels, followed by gradual racking through natural sedimentation and an extended period of lees ageing until late summer.
