The grapes are hand-harvested, with the majority carefully destemmed and fermented in large open-top stainless steel tanks for gentle extraction. Around 10% of the bunches are added as whole clusters, contributing aromatic lift, spice and structure. After fermentation, the wine is matured for about 11 months in French oak barrels, approximately 20% of which are new, adding subtle, integrated toasted and spicy notes while preserving the purity of the fruit.
