The fruit is destemmed and crushed before undergoing skin maceration, typically lasting 10–12 days, and alcoholic fermentation in temperature-controlled stainless-steel tanks for approximately 20–30 days. Malolactic fermentation takes place in 225-litre oak barrels, followed by maturation in French oak for 10 months and large casks for a further 12 months.
