The grapes are destemmed and crushed before undergoing skin maceration for approximately 10–12 days and alcoholic fermentation for around 20–30 days in temperature-controlled stainless-steel tanks. Natural fermentation is followed by malolactic fermentation in 225-litre barrels. The wine matures for 10 months in French oak, followed by a further 12 months in large casks, then spends 10 months in stainless-steel tanks and an additional 10 months in bottle before release.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eFood \u0026amp; Serving\u003c\/strong\u003e\u003cbr\u003eServe at 16–18°C in a large Burgundy or Nebbiolo glass to allow the aromas to unfold.
