Combining the grape’s characteristic structure and longevity with a rounded, elegant style, it offers impressive aromatic depth and a long, nuanced finish. Founded in Castiglione Falletto in 1921, Paolo Scavino has played an important role in shaping the reputation of Barolo on the international stage.

Tasting Notes
The wine presents a vibrant ruby-red colour with the beginnings of garnet nuance. Its aromatic profile is intense and layered, combining ripe red fruit with floral notes, delicate spice and an underlying earthy complexity. On the palate, the entry is soft and rounded, supported by a fine balance between fresh acidity and well-integrated tannins. Beneath its approachable texture lies considerable depth, while the finish is persistent, elegant and finely detailed.

The 2020 vintage offers both immediate appeal and the structure required for further development in bottle. With careful cellaring, it should gain additional tertiary complexity over the next decade or more, developing classic notes of dried flowers, leather, forest floor and spice.

Production
The Nebbiolo grapes are destemmed and crushed before undergoing an average of 10–12 days of skin maceration and approximately 20–30 days of natural alcoholic fermentation in temperature-controlled stainless-steel tanks. Malolactic fermentation takes place in 225-litre barrels during the winter. The wine is then matured for 10 months in French oak, followed by a further 12 months in large casks, 10 months of blending and settling in stainless steel, and an additional 10 months of bottle ageing. This careful progression is designed to preserve the character of the individual Barolo terroir while adding depth and polish.

Food & Serving
Serve at approximately 18°C in a large Burgundy or Nebbiolo glass to allow the wine’s aromas to unfold. Decanting for one to two hours is recommended when drinking it young, while older bottles should be decanted gently to separate any sediment. Its structure and savoury complexity make it an excellent match for truffle-based pasta, risotto with porcini mushrooms, braised beef, game, roasted lamb and mature hard cheeses.

Producer
Tenuta Paolo Scavino was established in 1921 in Castiglione Falletto and remains a family-run estate, now led by Enrico Scavino together with his daughters Enrica and Elisa. The family owns 29 hectares and works with a further 20 historic vineyards across several of Barolo’s most distinguished communes, including Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba and Verduno. Drawing on more than six decades of experience with cru Nebbiolo, the estate combines traditional Barolo identity with precise, modern winemaking, producing wines recognised for their terroir expression, complexity and elegance.
