Paolo Scavino works with vineyards in celebrated communes including Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba, Verduno and Roddi, allowing the wine to combine different expressions of the appellation. The grapes are destemmed and crushed before natural fermentation and skin maceration in temperature-controlled stainless-steel tanks. Maceration generally lasts 10–12 days, with alcoholic fermentation taking approximately 20–30 days. Malolactic fermentation takes place in 225-litre barrels, followed by ageing of the individual components in French oak for 10 months and large casks for a further 12 months.
