The grapes are destemmed and crushed before undergoing skin maceration for approximately 10–12 days and alcoholic fermentation for around 20–30 days in temperature-controlled stainless-steel tanks. Natural fermentation is followed by malolactic fermentation in 225-litre barrels. The wine matures for 10 months in French oak, followed by 12 months in large casks, then spends a further 10 months blending in stainless steel and 10 months ageing in bottle.
