The grapes are destemmed and crushed before undergoing skin maceration for approximately 10–12 days and alcoholic fermentation for around 20–30 days in temperature-controlled stainless-steel tanks. Natural fermentation is followed by malolactic fermentation in 225-litre French oak barrels.
