Red fruit and liquorice mingle with earthy and mineral flavours, while lively, polished tannins provide length and definition. The grapes are destemmed and crushed before undergoing skin maceration for approximately 10–12 days and alcoholic fermentation for around 20–30 days in temperature-controlled stainless-steel tanks. Malolactic fermentation takes place in 225-litre barrels, followed by natural tartaric stabilisation during the winter of the third year. The wine is matured for 10 months in French oak barrels, a further 12 months in large casks, then assembled in stainless steel for 10 months and bottle-aged for another 10 months.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eFood \u0026amp; Serving\u003c\/strong\u003e\u003cbr\u003eServe at 17–18°C after allowing the wine to warm gently in the glass.
