After destemming and crushing, the grapes undergo skin maceration for approximately 10–12 days and alcoholic fermentation for around 20–30 days in temperature-controlled stainless-steel tanks. Malolactic fermentation takes place in 225-litre wooden barrels, followed by approximately 10 months in French oak and 12 months in larger casks.
