The Nebbiolo grapes are destemmed and crushed before undergoing skin maceration of approximately 10–12 days and alcoholic fermentation for around 20–30 days in temperature-controlled stainless-steel tanks. Malolactic fermentation takes place in 225-litre wooden casks, followed by maturation in French oak for 10 months and large casks for a further 12 months.
