The grapes are harvested by hand, followed by a cold pre-fermentation maceration lasting 8–10 days at 10°C. Fermentation and maceration continue for a further 7–9 days, with daily manual pigeage and carefully controlled remontage. Although the domaine was officially established in 1963 following the marriage of Jean Taupenot and Denise Merme, the family’s winemaking heritage reaches back to the 18th century. Today, the seventh generation, Virginie and Romain, manages approximately 19 hectares of vineyards planted with Pinot Noir and Chardonnay.
