Inzolia grows at around 500 metres on clay and limestone soils, while Sauvignon Blanc is planted at elevations of up to 700 metres in sandy soils with a saline layer. The varieties are harvested separately between late August and September, then fermented at low temperature in stainless steel for around 15 days.
