Its combination of coastal freshness, limestone soils and a naturally long growing season gives the wine an elegant, dry character with more depth and structure than many warm-climate Sauvignon Blancs. Tabalí was among the pioneering producers to recognise Limarí Valley’s potential for premium still wine in the early 1990s.

Tasting Notes
Bright and fresh in appearance, this Sauvignon Blanc opens with fragrant aromas of green asparagus, freshly cut grass and gooseberry, alongside a crisp citrus impression. The palate is dry, lively and beautifully focused, combining refreshing acidity with a juicy, precise fruit character. Light and elegant in style, it nevertheless has excellent energy and a lingering, mouth-watering finish.

Best enjoyed for its youthful freshness, the 2024 vintage is ready to drink now. Its pronounced acidity and mineral character should allow it to develop gracefully over the short to medium term, although it is primarily a wine to enjoy while its vibrant fruit and aromatic freshness are at their peak.

Production
The grapes come from Tabalí’s Talinay vineyard in the cool coastal reaches of the Limarí Valley. Located close to the Pacific Ocean, the site experiences temperatures that remain below approximately 23.5°C, allowing the Sauvignon Blanc to ripen two to three weeks later than in many other Chilean coastal areas. The vineyard’s distinctive limestone subsoil contributes freshness, tension and a firm mineral edge. Harvest takes place around the second week of March, followed by fermentation in stainless steel at approximately 11–13°C to preserve the variety’s fresh, aromatic fruit expression.

Food & Serving
A versatile aperitif, this Sauvignon Blanc is an excellent match for oysters, prawns and other shellfish, as well as light poultry dishes, green salads and soft goat’s cheese. Serve well chilled at around 8–10°C. Decanting is not necessary; simply open shortly before serving to allow its delicate aromas to emerge.

Producer
Founded by Guillermo Luksic, Tabalí was one of the first Chilean wineries to invest seriously in the winemaking potential of the Limarí Valley. When the region was still largely associated with table grapes and pisco production, Luksic planted Tabalí’s first vineyards there in the early 1990s. The estate’s success helped demonstrate that Limarí’s cool climate and limestone-rich soils could produce distinctive, high-quality wines, with Sauvignon Blanc proving particularly well suited to the area’s coastal conditions.
