The vines are rooted in volcanic soils rich in clay and silt, which contribute to the wine’s distinctive mineral character. Harvesting takes place by hand in late October. Fermentation occurs in large oak casks over approximately 20 days, followed by spontaneous malolactic fermentation in smaller barrels. The wine then matures for 15 months between wood and stainless steel in close contact with its fine lees, without racking, followed by a further 15 months in stainless steel.
