Made from Chardonnay, Pinot Noir (Spätburgunder) and Pinot Meunier (Schwarzriesling), it combines precision, depth and elegance in a decidedly gastronomic style. Produced using the traditional method and aged extensively on the lees, this cuvée has quickly become one of the reference bottlings of Germany’s emerging sparkling wine scene.

Tasting Notes
In the glass, Tradition Brut appears a bright, pale lemon-gold with a very fine and persistent mousse, hinting at its long maturation on the lees. The nose is complex and inviting: yellow stone fruit (ripe mirabelle, white peach and apricot) mingles with red-berry nuances from the Pinot varieties, alongside delicate notes of brioche, fresh pastry, crushed stone and a subtle, chalky minerality.

On the palate, the wine is remarkably refined and focused. The attack is taut and linear, with a vibrant, citrus-led acidity that frames flavors of yellow plum, apple skin, wild strawberry and redcurrant. The long lees aging brings a gentle creaminess and a fine, silky texture, while savory, slightly smoky and nutty undertones add further layers of complexity. Despite the Brut designation, the dosage is very low (2 g/l), so the wine feels bone-dry, pure and saline on the finish. Already beautifully expressive at disgorgement in June 2023, it has the structure and freshness to develop more brioche, hazelnut and autolytic nuances over the next 5–7 years.

Production
The grapes for this cuvée come from carefully selected sites in three high-quality German regions: Pinot Noir from Bürgstadt in western Franken, Pinot Meunier from the cooler Taubertal, and a touch of Chardonnay from the volcanic soils of the Kaiserstuhl in Baden. This combination brings both ripe fruit and a vibrant mineral backbone. Fruit is picked by hand to ensure only healthy, perfectly ripe bunches are used. After pressing, the base wines undergo spontaneous fermentation and a natural malolactic conversion (BSA) in large traditional wooden casks, where they rest on the fine lees for 11 months to gain texture and aromatic complexity. The second fermentation takes place in bottle following the traditional method, after which the wine remains for a further 34 months on the lees to build its fine mousse and autolytic character. It was disgorged in June 2023 and finished with a very low dosage of 2 g/l, emphasizing terroir, precision and a dry, gastronomic style.

Food & Serving
Tradition Brut is a versatile, food-friendly sparkling wine that shines at the table. Its fine acidity and dry, mineral finish make it an excellent partner for oysters, scallops, sushi and other delicate seafood, as well as classic pairings like smoked trout, salmon tartare or ceviche. The Pinot component also lends enough depth for dishes such as poultry in light cream sauces, veal tartare, charcuterie, or mushroom risotto. Serve well-chilled at around 8–10 °C. A short decanting in a carafe, or pouring the first glass and giving the open bottle a few minutes in the glass, can help the aromatics open up, especially if served in a white wine or larger sparkling wine glass rather than a narrow flute.

Producer
Sekthaus BurkhardtSchür, based in Bürgstadt in western Franken, is widely regarded as one of the most exciting new names in German sparkling wine.
