Made from Negroamaro and shaped by the region’s dry Mediterranean climate and distinctive red soils, it combines generous ripe fruit with spice, softness and impressive length. Its story is rooted in the traditions of San Marzano, where a growers’ cooperative founded by 19 winegrowers in 1962 has grown into one of Puglia’s best-known producers.

Tasting Notes
The wine shows a deep, intense ruby-red colour. On the nose, it offers complex and lingering aromas of ripe cherries, soft fruit and warming spices, with the generous, sun-ripened character typical of Negroamaro from Salento.

On the palate, it is rich and full-bodied yet notably smooth and well balanced. Silky fruit, gentle spice and polished tannins lead to a pleasant, persistent finish. It is approachable now, while its structure and 12 months of oak ageing should allow it to develop further over the next few years when stored in a cool, dark cellar.

Production
The vineyards lie in Salento, between the Ionian and Adriatic Seas, in the provinces of Taranto and Brindisi. Here, vines grow alongside olive trees in characteristic red soils and endure a demanding Mediterranean climate marked by drought, occasional frost and hot Sirocco winds. The grapes undergo skin maceration for 18 days for approximately 80% of the wine and 25 days for the remaining 20%, followed by temperature-controlled fermentation. The wine is then matured for 12 months in French and Caucasian oak barrels, adding depth and subtle spice to the naturally generous fruit.

Food & Serving
A versatile partner for antipasti, grilled or roasted red meat, game and mature pecorino cheeses. Its richness also makes it a natural match for hearty pasta dishes and slow-cooked preparations. Serve slightly below room temperature, around 16–18°C. Decanting is not essential, but 30–60 minutes in a decanter can help open the wine’s aromas and soften its texture, particularly when enjoying a younger bottle.

Producer
Cantine San Marzano was founded in 1962, when 19 local winegrowers joined forces to protect and promote the wines of their area. Today, the cooperative brings together more than 1,200 growers and combines long-standing Puglian wine traditions with modern, technologically advanced facilities. Based in the heart of Salento and the renowned Primitivo di Manduria area, San Marzano has become a significant ambassador for the region’s rich, full-bodied and elegant wines.
