Its gravelly clay and gravelly loam soils provide excellent drainage and naturally moderate vine growth, while some of the oldest Zinfandel, Petite Sirah and Carignan vines date from 1901 and 1910. The organically farmed grapes were hand-harvested between 23 September and 24 October, destemmed and crushed, then allowed to undergo both alcoholic and malolactic fermentation naturally. The final blend comprises 76% Zinfandel, 14% Petite Sirah, 7% Carignan, 2% Alicante Bouschet and 1% Mataro, and was aged for 16 months in air-dried American oak barrels, 19% of which were new.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eFood \u0026amp; Serving\u003c\/strong\u003e\u003cbr\u003eServe at approximately 16–18°C after allowing the wine to breathe.
