The deep volcanic soils, composed largely of ash and pumice, are exceptionally well drained and contribute a pronounced mineral character to the wine. The Aglianico grapes are harvested and selected by hand, then traditionally fermented at controlled temperature for approximately three weeks to encourage the extraction of colour, flavour and polyphenols.
