After arriving at the winery, the grapes were destemmed and immediately chilled before pressing. The must underwent three days of cold static clarification, with the sediment removed within the first 24 hours, followed by temperature-controlled fermentation at no more than 18°C. The wine was then aged for eight months on its fine lees in a combination of 500-, 1,200- and 2,000-litre barrels, with weekly bâtonnage.
