Corvina, normally used for red Valpolicella wines, is gently pressed to produce a clear must, which is fermented as a white wine in tank. The Charmat method is used for the secondary fermentation, preserving primary fruit and freshness; the must is carefully filtered and cooled to prevent oxidation and maintain purity.
