The medium-grained, calcareous and mineral-rich soils contain clay veins that contribute to the wine’s depth and strong sense of place. Grapes are harvested at low yields of around 50–60 hectolitres per hectare and vinified in separate lots to preserve the identity of each microzone. Gentle pressing is followed by extended maceration: part of the fruit spends around three weeks on the skins, while the remainder undergoes submerged-cap maceration for up to 45 days, building the wine’s distinctive tannic framework.
