The estate’s vines are harvested with an emphasis on quality and balance, and the grapes ferment on their skins for approximately 12–14 days. The wine then matures for 22 months in oak: around 25% in large oak vessels of 1,500 litres or more, 30% in new 225-litre barriques, and the remainder in two- to five-year-old barriques.
