The finish is long, savoury and persistent. The south-facing vines are more than 50 years old and trained using the Guyot system, rooted in calcareous marl and sandy soils that lend the wine both structure and mineral intensity. Nebbiolo is harvested by hand in the second half of October, followed by controlled-temperature fermentation and prolonged skin maceration. The estate’s wines are highly regarded for their authenticity, structure and ability to age, while the Parafada vineyard is especially prestigious, having been identified as a first-category subzone on Renato Ratti’s historic Barolo map.
