The grapes are hand-harvested and gently pressed as whole bunches, then fermented spontaneously. The wine spends six months on its lees in concrete tanks and old barriques, before being bottled unfined and unfiltered, with no added sulphur.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eProducer\u003c\/strong\u003e\u003cbr\u003eFabien Jouves of Mas del Périé first drew attention for his red wines in Cahors, a historic centre of red wine production in southwest France.
