Its 20–40-year-old vines are biodynamically farmed in a 50:50 mixed planting of Pinot Blanc and Auxerrois; the grapes are harvested selectively by hand and vinified together. Whole bunches are pressed slowly, followed by spontaneous alcoholic and malolactic fermentation in a large wooden cask.
