The hillside setting and local microclimate encourage even ripening and aromatic finesse. Harvest takes place by hand in mid-October, followed by careful selection. Fermentation takes place in temperature-controlled stainless-steel tanks, with around 20 days of maceration and regular pump-overs and délestage.
